Ready-In-5 Chickpea Quinoa Bowl
This chickpea bowl is an easy, delicious recipe that takes less than 5 minutes to prepare. Packed with tons of protein, this meal offers the perfect combination of tasty, convenient, and nutritious! Enjoy some crackers or pretzels if your wanting to add some easy carbs!
INGREDIENTS
Canned chickpeas (1 can)
Microwave Quinoa Packet
2 stocks of celery
2 carrots
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 lemon
1 tsp of salt
2 tsp of pepper
INSTRUCTIONS
Step 1: Rinse and drain canned chickpeas
Step 2: Chop up celery and carrots and set aside.
Step 3: Per the instructions of your desired Quinoa, microwave until water is absorbed and quinoa is cooked.
Step 4: In a bowl, combine chickpeas, quinoa, celery, and carrots.
Step 5: Add Dijon mustard, apple cider vinegar, salt, and pepper, and mix until mustard is evenly combined with ingredients.
Step 6: Optional: add paprika, Italian seasoning. Enjoy!
