Mediterranean Tuna Salad

This simple tuna salad is a similar recipe to my chickpea tuna salad, but with a mediterranean kick! Combined with olives (which have amazing health benefits such as increased heart health and blood sugar control) this tuna salad is the perfect snack or lunch plate for your busy schedule!

INGREDIENTS

  • Canned white tuna

  • 1 can chickpeas

  • 1 cucumber

  • 1 red bell pepper

  • 1/2 red onion

  • 1/2 cup black olives (cut in half)

  • 3 tbsp extra virgin olive oil

  • 1 lemon squeezed

  • 2 cloves garlic minced

  • salt and pepper

  • 1/2 bunch of lettuce

    • ALTERNATE: 1/2 head cabbage

Step by Step

Step 1: Drain and rinse canned chickpeas

Step 2: In a medium bowl, mash chickpeas with a fork until mostly broken apart

Step 3: Drain tuna and mix with chickpeas

Step 4: Dice cucumber, red bell pepper, and onion.

Step 5: Mix vegetables along with halved olives into chickpea and tuna bowl

Step 6: For dressing, combine olive oil, lemon, and garlic in a separate bowl

Step 7: Add salt and pepper to taste

Step 8: Pour dressing over tuna-chickpea mixture and combine well

Step 9: Rinse and chop up lettuce (or cabbage)

Step 10: Serve tuna-chickpea over lettuce or cabbage and enjoy!
